En la UCT, el Dr. Hernández Montelongo es Profesor Asistente del Departamento de Ciencias Matemáticas y Físicas de la Facultad de Ingeniería. Es miembro del Comité Académico del Magíster en Matemáticas Aplicadas y del Núcleo de Bioproductos y Materiales Avanzados (BioMA). También es Profesor Visitante del Doctorado en Ciencias mención Biología Celular y Molecular Aplicada, que imparte la Universidad de La Frontera.

El profesor Jacobo es Ingeniero Químico por parte de la Universidad de Guadalajara (México), y Doctor en Materiales Avanzados y Nanotecnología por la Universidad Autónoma de Madrid (España). Realizó su postdoctorado en la Universidad Estatal de Campinas (Brasil) y ha hecho estancias científicas en los centros de investigación: Unidad de Materiales y Transformaciones de la Universidad de Lille-1 (Francia), Instituto de Sanidad y Protección al Consumidor del Centro Común de Investigaciones de la Unión Europea (Italia), Laboratorio Europeo de Radiación Sincrotrón (Francia), entre otros.

Es un experto en las áreas de biofísica y biomateriales: estudia la interfaz entre materiales y sistemas biológicos, así como el desarrollo de nuevos dispositivos con aplicaciones biomédicas. Su experiencia es multidisciplinar: la frontera entre la física, química y biología es evidente en su producción científica. Es revisor en más de 20 revistas especializadas.
